- 2 ounces Mezcal
- 1 ounce Cointreau (or triple sec)
- 4 ounces Fresh squeezed pineapple juice
- Juice of half a lemon
- Garnish with pineapple wedge, lime wedge and fresh mint
Fill a cocktail shaker with ice.
Combine mezcal, orange liqueur, and pineapple juice and shake vigorously for 30 seconds.
In two glasses filled with ice, pour in cocktail mixture. Squeeze the juice from one fresh lime, top with tonic water, and garnish with a slice of pineapple and/or lime (optional). Grilled pineapple is a great touch, as well.
