Anti-Inflammatory Summer Salad

This seasonal salad is not only easy to assemble but it’s also delicious, making it our go-to lunch this summer. Packed with anti-inflammatory ingredients, it’s the perfect fuel to nourish your body.
SERVES/MAKES: 2

Ingredients:

  • 4 cups Fresh Spinach
  • 1 cup Broccoli Florets
  • 1 cup Strawberries, sliced
  • 1/2 cup Avocado, sliced
  • 1/2 cup Slivered Almonds
  • 1 cup Shredded Carrots
  • 1 cup Fresh Blueberries
  • 3 tbsp Red Wine Vinegar
  • 2 tbsp Dijon Mustard
  • 1 tsp Minced Garlic
  • 1 tsp Dried Oregano
  • 1/2 tsp Sea Salt
  • 1/2 tsp Ground Black Pepper
  • 2 tbsp Fresh Lemon Juice
  • 1/2 cup Extra Virgin Olive Oil

Instructions:

  • In a large bowl, add the spinach and broccoli florets. Top with berries, avocado, almonds, and carrots.
  • For the dressing, combine all remaining ingredients to a glass jar. Shake until well combined.
  • Top the salad with the dressing. Serve immediately and enjoy!
